Site Observation:
Observed kitchen staff member(s) wash gloved hands and attempt to return to food service. [CA] Gloves are single use only and are to be changed out, not washed and re-used. Employees are to wash hands before work and between tasks and after any tasks which may result in potential contamination prior to conducting food handling activities.

Site Observation:
Observed talapia fillets being thawed in standing water in a bin on counter. [CA] Practice proper thawing practices: 1) in refrigerator, 2) under cold running water, 3) in microwave, 4) as part of the cooking process.

Facility utilizing cardboard as floor liner at walk in refrigerator. [CA] Discontinue use of cardboard as liners and/or covers. Use only approved materials which are durable, easily cleanable, and non-absorbent.

Site Observation:
Tested chlorine sanitizer at 200 parts per million (PPM) in sani bucket. [CA] Maintain chlorine sanitizer at 100 ppm or quat sanitizer in sani bucket at 200 ppm or as indicated by manufacture to ensure proper sanitization.

Wet sani towels on counter. [CA] Place soiled/used sani towels in sani bucket with sanitizer when not in use.
